Four chickens is A LOT of chicken. The plan was to make beer butt chicken, and then strip off all the meat and have leftovers for lunches and dinners for a long while, thus combining easy weekday meal prep with EXTREME THRIFTYNESS!
PLUS as an added bonus, I kept the carcases so that tomorrow night, I will get a big ole’ pot of stock bubbling on the stove – stock to make sauces, soups, and rice dishes.
I have a feeling that by friday? We’re going to be very very VERY sick of chicken. AND YET STILL HAVE PLENTY LEFT!

Freeze some of the meat right around the time you’re tired of eating chicken salad sandwiches on fresh pita bread with shredded lettuce and a touch of shredded radiccio.
Crap.
Now I want some beer butt chicken salad… at midnight.
Ok. You just made me pull my chicken out of the freezer. Evil one.

I’ve never had chicken done that way. Must put that on my list of things to do eventually
